Simply Divine
I have been going through a life change,
involving my eating, and what i feed my family.
I always thought we were fairly good eaters, but oh contrare, alas
i dont think we were.
If you love the way you eat now i would sugjest you never watch the
movie ‘Food Inc.’
because once you watch this you will be forst to change things.
Ok so now past all that,
here is an amazing recipe i found online, randomly
Healthy Spinach Lasagna
Ingredients As follows:
Lasagna noodles ( it calls for 9, but i always cook a whole package, i always end up making more layers than what is called for, plus the kids and R. like to eat whatever is leftover)
1 T olive oil
1 onion , diced
3 or 4…or 5 or 6 garlic cloves ( depends on how crazy you want to get with the garlic)
1 family sized bag of baby spinach
1 – 16 ounce container of Ricotta cheese
1 package of Tofu…
( ok now this is where i got a little nuts, i used only half the ricotta cheese and the rest tofu)
Nobody could even tell it was in there, so if you were worried about not having any protein, there ya go!
1/4 cup Romano cheese
salt to taste
1- 1/2 t. Italian seasoning
Pepper to taste
1 -1/2 cups of Mozzarella cheese
1 jar of homestyle mainara sauce
1 c. water
Boil noodles till done.
Saute garlic and onions, turn on low heat and add Spinach, cover
for 5 mins and let cool to room temp.
In a bowl mix together ricotta, Romano, tofu, salt, pepper, Italian seasoning
and cooled spinach.
In another bowl combine water and marinara sauce.
Start layering in a greased 13×9 pan in this order
Sauce, noodles, spinach/cheese mix, mozzarella.
keep layering until you think you have enough, or you run
out of ingredients.
Top with Mozzarella cheese and cover with tinfoil and
bake at 350 degrees for 1 -1/2 hours
After wards let cool a bit and devour!
This is a dish the whole family will love,
its good by its self or a nice salad and french bread would
go good with it.

Oh So Yummy
I called my favorite cook book this afternoon, Did you know there are phone cookbooks? What you don’t have one? my life would be in utter despair if not for mine….its in the directory listed at Jessica McAfee (my dear older sister) I don’t know what i would do without her, she has saved my families dinners many a time.
And tonight was no exception, I called needing a recipe that used red potatoes…I had a bag that needed using and i didn’t feel like whipping up the same o’l roasted ones i always do. So this is what she gave me.
First you boil whole red taters in salted water….
when done, you place them on a cookie sheet drizzled with olive oil.
Place taters in rows and do THIS to them.
With a tater masher,

You brush them with olive oil and sprinkle with Kosher salt and grind some pepper over them.

Don’t they look simply divine???
You bake them at 450 degrees for around 25-30 mins
and you end up with finger licking yummy sweet goodness

Oh yes, 4 of these did not even make it to the dinner table….both Rudy and i were hovering over the stove.
I dont think i will ever make red potatoes any other way BUT this way,
I might even make them weekly, for breakfast
maybe lunch
and most definitely for dinner
